George Town’s newest, buzzing restaurant and bar is truly U’NIQUE

Having opened in December 2021, U’NIQUE is George Town’s newest, buzzing restaurant and bar, offering a sleek and laid-back ambience with a harmonious and minimalistic menu, complemented by paired wines and an exciting cocktail selection.

A ‘unique’ partnership and love of all things Cayman, results in an Island inspired theme at U’NIQUE Restaurant & Bar

Mr. Nairne & Nicky Hull-Saldahna are the proud owners of George Town’s U’NIQUE Restaurant & Bar.  Mr. Nairne, who has lived in Cayman most of his life, has dedicated his career to providing a bounty of job opportunities for other young Caymanians through various businesses, enabling them to excel and show off their talents.

Mr. Hull-Saldahna, originally from Portugal, was raised and trained in England. He first arrived in Cayman in 2007, falling in love with the easy-going and CaymanKind lifestyle and stunning landscape. Prior to working alongside Mr. Nairne at his restaurant, Outpost Bar & Grill in Pedro, and subsequently opening U’NIQUE, he was the chef de cuisine at the Cracked Conch.  

Their combined creativity and shared passion for the abundance of fresh local seafood and growing access to local produce in Cayman was the inspiration behind presenting Cayman with an innovative and ambitious menu designed to reflect the Island they both love.

A Cuisine influenced by fresh local seafood and locally grown produce 

U’NIQUE’s colourful and inspired menu was created by part owner and head chef, Chef Nicky Hull-Saldahna together with Caymanian sous chefs Will Jackson and Bradley McLaughlin.  Their collaboration resulted in a one of a kind menu where each dish is designed to incorporate as many local ingredients as possible, staying true to the inspiration behind the restaurant.  

One of the restaurants favourites and a “must try” dish is their salt cured wahoo which boasts a combination of bold flavours and embodies the vision for the restaurant.  

U’NIQUE features a brunch influenced Saturday Benedict’s menu:  mushroom | steak | ceviche @ $18.00 and $9 Caesar cocktails. 

Happy hour is daily between 4-7pm with other weekly specials including an Express Menu Monday – Friday, Industry Night on Wednesdays, and Small Plates & Sangria on Mondays.   

Available for private events, meetings and off-site catering. 

The U’nique team’s motto is: Inspired by Cayman, made ‘U’NIQUE-ly’ for you. 

Opening hours: Monday – Saturday 11am – 10pm.  (Delivery service will soon be available)
