Located in West Bay Yacht Club, Bàcaro’s exquisite Venetian style cuisine has gained them a reputation for excellence with a fresh and exciting menu, offering something for everyone in a classy and elegant waterfront setting.

This unique Cayman restaurant exudes class and is a result of owners, Federico Destro and Barney Bako’s passion for fine dining and creating exceptional memories.

Owner and Head Chef Federico Destro kindly found time in his busy schedule to answer a few questions for me, to give our readers an insight into the maestro behind Bàcaro’s exquisite menu.

Where are you from originally?

Venice, Italy

When did you first come to Cayman and why?

December 1999. I was looking to travel the world and do a working experience abroad, and by coincidence ended up here.

Where else in the world have you worked prior to arriving in Cayman?

I have travelled all over the world but only worked in Cayman.

Who or what inspired you to become a chef?

My mom and my late uncle who was a chef.

What would you say is the key element in running a successful kitchen?

1) Create a great team and look after them; 2) never settle for mediocrity; 3) embrace competition.

What are your “go to” seasonings and why?

Everything starts with salt…

What is your favourite dish and why?

Toughest question ever because there are many and it depends on my mood; I would say seafood Risotto is always a good call.

How do you decide what to include on the menu?

Many factors, my fellow cooks’ suggestions, customers’ requests (sometimes), seasonability, culinary trends and whatever inspires me on the day.

Have you ever had a Kitchen Nightmare?

Once I accidentally poured 50lbs of deep frying oil on the floor of a very small kitchen and took about two days to clean it up.

What would you recommend as a romantic meal for two?

Fresh good quality raw seafood, followed by a nice pasta dish and a great bottle of wine!

What advice would you give to someone looking to start a culinary career?

Don’t do it to become famous and rich because only very few chefs get to that point. Always aim for success but be patient, it’s an extremely tough job but hard work and dedication eventually pay off.

“People who love to eat are always the best people”

Bàcaro are currently open Tuesday-Friday 11:30am-10:30pm, Saturday 9:30am-10:30pm and Sundays 12:00pm-10:30pm.  Closed on Mondays.
